Do you ever want to make the perfect breakfast on the weekend or a special birthday?
The perfect breakfast is, of course, a stack of warm, yummy pancakes! Today, we are going to make delicious Buttermilk Pancakes.
To get started, you will need two mixing bowls. One for the dry ingredients and one for the wet ingredients.
In the dry bowl mix, begin to add a cup of flour and a tablespoon of sugar. Then add a teaspoon of baking powder, 1/4 teaspoon of baking soda, 1/4 teaspoon of salt and then last but not least, add 1/4 teaspoon of ground cinnamon. Adding the cinnmon will give your pancakes a great flavor that makes them different from any other ordinary pancake.
For the wet mix, crack 1 egg and add to the bowl. Then add in 1 cup of buttermilk and 2 tablespoons of olive oil. Mix it all together.
Next, add all of the wet mixture to the dry mixture. Add it in all at once and stir just until you cannot see any dry ingredients. the mixture will end up being pretty lumpy. Be careful not to overmix or your pancakes will not be soft and fluffy!
If you would like, before adding pancakes to the skillet, fold in blueberries to make the pancakes extra special! Set aside made. 🙂
Folding in an ingredient means to lightly and gently mix together. Try using a rubber spatula to make the mixing more gentle.
Set the batter aside for 5-10 minutes while you preheat your skillet and clean up any mess you may have made. 🙂
Preheat the skillet on a medium heat level. Before adding batter to the pan, add about a tablespoon of olive oil to the hot pan. Pour about 1/4 cup of batter onto the skillet and cook for about 2 or so minutes.
Once the side is golden brown and has a bubbly surface, flip to cook the other side.
To make the pancakes even more fun, you can make shapes or letters by using a squirt bottle. If you do not have a squirt bottle, you can use a plastic sandwich bag and add the pancake batter to the bag. Squeeze the batter to a corner and use scissors to cut off a small corner of the bag. Through the small hole you can squeeze out the batter in a thin line and make any letters or shapes you choose!
Make as large of a stack of pancakes as you want! Put them on a plate, add warm maple syrup and serve to your lucky guests.
