Huevos Rancheros

This week in cooking class, we explored the flavors of Texas while cracking a few eggs to make delicious and healthy Heuvos Rancheros.  Thanks to the influences of Mexico, we have many yummy Tex-Mex dishes and this one is a favorite!

Huevos Rancheros

Ingredients

  • 2-3 T vegetable oil
  • 4, 6-inch corn tortillas
  • 1 cup black beans
  • 4 eggs
  • 1 cup cheddar cheese, shredded
  • 1 small avocado, diced
  • cilantro, optional
  • salsa, optional

Directions

  • Heat oil in a skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain any excess oil. Place tortillas onto plates.
  • Crack eggs, one at a time into a small bowl. Carefully pour egg into preheated skillet. Add a bit more oil if needed. Fry egg over easy. Remove to plate.
  • Spread layer of beans onto each tortilla. Top with cheese, avocado, fried egg, cilantro and salsa.
