Picnic Time

Some friends and I like to go picnicing at  Symphony in the Park on Sundays.  Lot’s of yummy food, fun music, fun people, kids dancing all around, and beautiful sunsets.

Picnics are fun!

Labor Day is coming up this weekend which is also a perfect time for a picnic.  The last hoorah before a busy fall season.

Here is a super yummy chicken salad sandwich recipe, perfect for a picnic with friends and family.

You really don’t need a recipe for measuring.  Just add the ingredients, taste and then decide if you need more of anything.

First chop up a few stalks of celery and put a handful into a mixing bowl.

Then add a couple of tablespoons of sour cream and mayonaise to a mixing bowl.

Add chopped parsley,

and some chopped apple.

Here’s the secret ingredient: green curry paste! (shhhhh, don’t tell anyone, ok?) Just kidding, you can tell.

Add 1-2 teaspoons plus a good pinch of salt.

Chop up some cooked chicken and add it to the bowl.  Now do the chicken dance in the kitchen.  🙂

Taste your wonderful creation and decide if it tastes good.  Is it creamy enough?  Salty enough? Can you taste the curry?  Does it need more crunch?  Then, add a little more of whatever you think it needs.

Mine needed a little more curry and salt.  I like curry and salt.

Then slice up a beautiful tomato.  Spread some of the curried chicken salad on your favorite sandwich bread, add a slice of tomato and lettuce and another slice of bread.
